Chickpea Tikka Masala and Coconut Rice



Chickpea Tikka Masala

2 Tbsp olive oil
½ onion, diced
2 Tbsp minced garlic
1 Tbsp Garam Masala
Sprinkle Ginger
1 fresh jalapeno pepper, minced
2 cans chickpeas drained and rinsed
1 can diced tomatoes and chilies
1 can petite diced tomatoes (14.50z)
1 can full fat coconut milk
1 Tbsp cornstarch + 1 Tbsp water mixed in a bowl (add at end to thicken sauce)
Salt to taste

Heat olive oil in large saucepan. Add diced onion and garlic and pinch of salt. Sautee the onions and garlic until partly translucent about 2 minutes. Stir in Garam Masala, ginger and jalapenos and cook for another minute. Add chickpeas and diced tomatoes, bring to a boil, lower heat and simmer for 15 minutes. Stir in coconut milk and return to simmer 5-10 min. Stir in cornstarch/water mixture to thicken sauce. Let sit for a few minutes. Serve with coconut rice.



Coconut Rice

2 Cups Basmati rice
2 Cups water
1 can full fat coconut milk
1 tsp coconut extract
1 tsp salt

Add all ingredients to rice cooker stir and cook. 
- We could never find a rice that had enough coconut taste but this one does!

Preschool fun, outside fun

 We had a lot of fun doing a Despicable Me preschool lesson. The kids loved painting with q tips and coloring minions.





 Kids got a fun new slide for the backyard! They play so nice by themselves out there at night now. It is a big relief for me. The hardest hour is dinner and the wildness after so it's nice they like the backyard so much. Their other favorite thing is to get water from the fridge and pour it on the concrete. They did that for an hour yesterday! Evie can finally reach the water button so they had a blast with that. Feel bad we are wasting water but it is also very entertaining for them.

 Layla is such a cutie. She is always on her tummy. Andrew and Evie hated tummy time so it's funny she likes it so much. She even likes it on the grass. I thought the pokey grass would bug her but she just tried eating it and had fun.


 Her new favorite "toy" is fruit snacks. She loves the crinkly wrapper sounds haha.
 Hershey park has been fun this week. I did the water park and pool with the kids and then let them go on rides. It's exhausting by myself but also fun.


Brandon is working tonight and half the day tomorrow for his big long shift. We are going to have some friends come over and do a pizza and movie night on our big screen so that is going to be fun! Her husband is also working a late shift so it works out great. I moved Evie's toddler bed into Andrew's room to have them start sharing so that has been a big new change. They laughed and played until 10:00 last night! But finally went to bed. Don't know if that is going to work out so well but we will keep trying. Layla slept so well in Evie's nice crib so I just want Evie to move into the toddler bed for good but she has been so resistant. Moving to Andrew's room was fun for her though she thought that was awesome.

Beach day


 Andrew's disgusted face, haha. He hated the beach!



We got to go to the Lantana beach yesterday. Andrew hated it though :( He was disgusted by the sand and would not step off the towel. He is so funny sometimes. The water had some waves so I think that was the problem. We need to go early afternoon instead. He would not get in the water and would not play in the sand. Evie really liked it though. She loves getting in the water. So we only stayed for about 30 minutes. We will have to go more often so Andrew stops being scared of sand, haha. They are both still pretty stuffy and have coughs. Evie got to wash her nose out in the ocean so hopefully that helps her out a little.

I had all the pumpkin face parts on the bottom of the poster for the kids to pick out. I brought another bag full of the songs for this year's program for them to pick out. So they picked a song and a pumpkin face piece.

I printed the fish on cardstock and laminated them. On the back I wrote songs for the kids to fish out. I put the fish in a box or the "pond" and made a stick with a string and a magnet tied to the bottom. The fish each had a paper clip attached so they would stick to the magnet on the pole.
